
If you love zucchini and basil, or if you have a bunch of extra zucchini to use up, this is the recipe for you. This easy salad requires minimal equipment, a mandolin makes slicing the zucchini easier, but you can use a knife and cut the ribbons as thin as possible.
Ingredients
for the dressing:
Lemon juice and zest from 1 lemon
pinch of salt
1 tsp honey
1/4 cup olive oil
For the salad:
1-2 zucchinis sliced lengthwise into ribbons
Basil leaves, as much as you like
1 tbsp toasted pine nuts
Generous amount of fresh parmesan
